Budwig Protocol friendly Air-fried kachori
Air fryer kachori is easy to make at home. These crispy dough balls are stuffed with a spicy filling prepared by cooking Black Lentil, Chickpea Flour, and spices and cooked in the air fryer to give them a healthier twist. This recipe is fully based on the science and suggestions given by Dr. Johanna Budwig. We have not done any frying to prepare the kachori, we even didn’t add any oil to the kachori dough and filling. They still have a crispy texture but contain zero Transfat and fewer calories. Lastly, kachoris were brushed with melted oleolox and air-fried for two minutes. Oleolux is a savory butter for food created by Dr. Johanna Budwig. It is a rich blend of cold-pressed flaxseed oil and virgin coconut oil delicately enhanced with onion and garlic. It can be heated for two minutes.
The purpose of this recipe is not to promote Kachoris to the patients following Budwig Protocol in a regular way. But sometimes they can enjoy this healthy savory and delicious snack for a change.
Note: if you don’t get some of the ingredients, try to use similar ingredients available in your country.
● 1½ cup all-purpose flour (maida)
● ½ cup Kodo millet flour or other millet
● ¼ teaspoon Salt
● ½ cup or more water as required
● 1 Cup split and skinned Black Lentil (dhuli Urad dal)
● ¾ Cup Chickpea Flour (Besan)
● 6-8 Cloves
● 20-25 Black Peppercorn
● 2 Teaspoon Coriander Seeds
● 2 Teaspoon Fennel Seeds
● 2 Teaspoon Red Chilli Powder
● 1/2 Teaspoon Asafoetida (Heeng)
● Salt to taste
● Oleolox for brushing kachoris
जिन्हें कैंसर नहीं है वह ऑलियोलक्स की जगह कोई बढ़िया कोल्ड-प्रेस्ड तेल और मिलेट नहीं हो तो सिर्फ मैदा का प्रयोग कर सकते हैं। यदि आपके पास एयर फ्रायर नहीं है तो आप ओवन अथवा बाटी मेकर में भी कचोरी बना सकते हैं। मेन बात यह है कि अच्छा कोल्ड-प्रेस्ड तेल का प्रयोग हो और फ्राइंग भी नहीं हो ताकि इसमें जानलेवा ट्रांसफैट नहीं बने।
Making kachori dough:
To start making the kachori dough or pastry, mix together flours and salt. Start by adding ½ cup water and kneading it into a firm dough. You may need a few extra teaspoons of water but add gradually as needed. The consistency of the dough should be stiff. Cover the dough with a damp cloth and set it aside while you make the filling.
Preparing the filling:
Soak the split and skinned Black Lentil in water for about 1 hour. Boil the Lentil in water for a few minutes until it becomes soft and drain the water. Crush the Peppercorn, coriander seeds, and fennel seeds, roughly and add them to the pan. Keep on stirring with a spatula. Heat the spices briefly in a pan till mild aroma is released, but be careful not to burn them. Now add lentils, Chickpea Flour, red chilies powder, salt, and asafetida to the pan and cook on medium heat for a few minutes until Chickpea Flour, red chilies powder, salt, and asafetida to the pan and cook on medium heat for a few minutes until is cooked and aroma is released. Keep on stirring with a spatula.
Wrapping the kachori:
Make the lemon size balls from the filling mixture. Take a piece of dough slightly larger than the filling and flatten it out with your hand to make a small disc keeping it slightly thick in the middle and slightly thinner on the sides. Place the ball of filling in the center of the disc. Brush some water with your fingers on the edges of the disc. Fold the edges on each other and seal the top. You can remove the extra dough from the top. Very gently shape the filled dough into a round disc shape (RBC shape). With a hand flatten the ball slightly into the shape of a kachori. Repeat till all the dough is used up. Place the kachoris in your air fryer’s basket, making sure they don’t touch each other either.
Air Frying the Kachori:
Cook the kachori in an air fryer at 200 degrees C for 13 minutes. After about 6 minutes remove the air fryer’s basket and flip the kachoris. Slide in the basket and continue air frying. After 11 minutes remove the basket out once more. Now the kachoris should look light golden brown.
Dip the kachoris in melted oleolox briefly or brush the kachoris with oleolox, then place them in the air fryer basket, and cook in the air fryer for two minutes. Take them out on a plate and serve them immediately with coriander chutneys.
We used Philips Air Fryer HD9252/90. You may also try to make these kachoris in an oven.
