Dandelion Salad

  • 250gm of dandelion greens, rinsed and dried
  • 1 teaspoon minced shallot
  • 1 teaspoon mustard
  • 3 tablespoons flaxseed oil
  • 100gm quark or cottage cheese
  • 3 tablespoons milk
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground pepper
  • Whisk together the flaxseed oil, quark, and milk.
  • Add shallot, mustard, and vinegar.
  • Season with salt and pepper to taste.
  • Toss the dandelion greens with the dressing and enjoy the salad.
