- 250gm of dandelion greens, rinsed and dried
- 1 teaspoon minced shallot
- 1 teaspoon mustard
- 3 tablespoons flaxseed oil
- 100gm quark or cottage cheese
- 3 tablespoons milk
- 1 tablespoon apple cider vinegar
- Salt and freshly ground pepper
- Whisk together the flaxseed oil, quark, and milk.
- Add shallot, mustard, and vinegar.
- Season with salt and pepper to taste.
- Toss the dandelion greens with the dressing and enjoy the salad.
